Pesto (pesto genovese) is both a raw puree of basil leaves and partly an emulsion with olive oil. It traditionally consists of garlic, basil leaves, coarse salt and European pine nuts blended with a hard cheese such as Parmigiano-Reggiano and/or Pecorino sardo, all blended with olive oil.
